Easy Cauliflower Rice

Ingredients:

1 Head of Cauliflower, rinsed and dried

2 cloves gahlic (that’s New Englander for garlic) minced

2 TBS coconut oil

1 onion, diced

salt and pepper (to taste)

Directions:

Chop the cauliflower and pulse in the food processor until into fine pieces (about the size of grains of rice)

(You can also grate the cauliflower with a cheese grater, and the pieces will come out a bit more “rice” like. I am physically unable to do this without making a gigantic mess, though, so I use the food processor…..)

Heat the coconut oil over medium heat in a skillet

Add the onion and gahlic and saute until the onions begin to become translucent (4-5 minutes)

Add the cauliflower, salt and pepper and continue to saute for another 4-5 minutes

Serve as you would rice. We’ve used this as a side dish, in burrito bowls, and with stews and such….You can play with the seasonings you add to give it different flavors as well. I’ve also been known to cook it with a bit of bacon grease to add a different flavor.
